Ingredients:

  • 1 kg potatoes (skin-on, washed and cut into thick chips)
  • 2 cups rice bran oil (for frying)
  • 2 tablespoons Chooki’s Original Chicken Salt
  • 1 teaspoon cracked black pepper
  • Fresh parsley (optional, for garnish)

Instructions:

Prepare the Chips:

  1. Wash the potatoes thoroughly, leaving the skin on for extra texture and flavour. Cut them into thick chips.
  2. Soak the cut chips in a bowl of cold water for 20 minutes to remove excess starch. Drain and pat dry with a clean kitchen towel.

Heat the Oil:

  1. In a large, deep frying pan, heat the rice bran oil over medium-high heat until it reaches 180°C (350°F). You can test by dropping in a small piece of potato—if it sizzles immediately, you’re good to go.

Fry the Chips:

  1. Fry the chips in batches to avoid overcrowding the pan. Cook each batch for 4-5 minutes, or until golden and crispy. Use a slotted spoon to transfer the cooked chips to a paper towel-lined tray to drain excess oil.
