  • 25g butter, divided
  • 3/4 cup grated cheddar
  • 1 teaspoon Chooki's Chilli Chicken Salt
  • Tomato chutney, to serve

This is a proper cold-morning toastie: crisp bread, soft eggs, and cheddar that melts into the edges. Chooki's Chilli Chicken Salt gives it a gentle kick without turning breakfast into a dare.

  • 4 slices sourdough or sandwich bread
  • 3 eggs
  • 2 tablespoons milk
  • 25g butter, divided
  • 3/4 cup grated cheddar
  • 1 teaspoon Chooki's Chilli Chicken Salt
  • Tomato chutney, to serve

Step 1: Scramble

Whisk the eggs, milk, and Chooki's Chilli Chicken Salt in a bowl. Melt half the butter in a non-stick pan over medium-low heat, add the eggs, and stir gently for 2 to 3 minutes until just set and still soft.

Step 2: Fill

Lay out the bread and divide the cheddar between two slices. Spoon the warm scrambled egg on top, then close the toasties with the remaining bread.

Step 3: Toast

Melt the remaining butter in the pan over medium heat. Cook the toasties for 2 to 3 minutes each side, pressing lightly, until the bread is golden and the cheese has melted.

Tip: Pull the eggs off the heat while they still look a little glossy. They finish cooking inside the toastie and stay soft instead of rubbery.
