Chilli Salt Prawn Toast Bites with Lime Mayo

Ingredients

  • 400g raw prawn meat, peeled and deveined
  • 1 spring onion, roughly chopped
  • 1 egg white
  • 2 teaspoons Chooki's Chilli Chicken Salt
  • 6 slices white sandwich bread, crusts cut off
  • 4 tablespoons sesame seeds
  • 1 cup neutral oil, for shallow frying
  • Lime Mayo:
  • 1/2 cup whole egg mayonnaise
  • 1 tablespoon lime juice, plus wedges to serve
  • 1/2 teaspoon Chooki's Chilli Chicken Salt

Prawn toast is the best thing on any yum cha trolley and it is dead simple at home. Chooki's Chilli Chicken Salt goes straight into the prawn mince, so the heat is baked through the bite instead of sitting on top. Cut them small, fry them hot, and they will vanish before you sit down.

  • 400g raw prawn meat, peeled and deveined
  • 1 spring onion, roughly chopped
  • 1 egg white

  • 6 slices white sandwich bread, crusts cut off
  • 4 tablespoons sesame seeds
  • 1 cup neutral oil, for shallow frying
  • Lime Mayo:
  • 1/2 cup whole egg mayonnaise
  • 1 tablespoon lime juice, plus wedges to serve
  • 1/2 teaspoon Chooki's Chilli Chicken Salt

Step 1: Blitz the Prawn Mix

Pat the prawns dry with paper towel, then blitz them in a food processor with the spring onion, egg white and 2 teaspoons of Chooki's Chilli Chicken Salt. Stop while it is still a bit coarse. You want texture, not paste.

Step 2: Spread and Sesame

Spread the prawn mix over the bread, about 5mm thick, right to the edges. Cut each slice into four squares. Press the prawn side firmly into the sesame seeds spread on a plate so they properly stick.

Step 3: Shallow Fry

Heat the oil in a frypan over medium-high until a sesame seed sizzles straight away. Fry the squares prawn side down for 2 minutes until deep golden, flip for another minute, then drain on a rack. Do them in batches so the oil stays hot.

Step 4: Mix the Mayo and Serve

Stir the mayonnaise, lime juice and remaining Chooki's Chilli Chicken Salt together. Pile the bites on a board with the mayo and lime wedges alongside.

Tip: Day-old bread works better than fresh. It is drier, so it soaks up less oil and stays crunchy longer.
