  • 2 sheets frozen puff pastry, thawed
  • 1/3 cup tomato paste
  • 2 cups grated mozzarella or tasty cheese
  • 1/2 red capsicum, finely diced
  • 2 teaspoons dried oregano
  • 1 tablespoon Chooki's Original Chicken Salt
  • 1 egg, lightly beaten

These cheesy pizza scrolls are the after-school snack that disappears before they've even cooled. ๐Ÿ‘จโ€๐Ÿ‘ฉโ€๐Ÿ‘งโ€๐Ÿ‘ฆ Cook With the Kids: they can spread the sauce, scatter the cheese, and squish the roll while you handle the oven. A good pinch of Chooki's Original Chicken Salt through the filling is what makes them taste like the servo scrolls you actually want.

  • 2 sheets frozen puff pastry, thawed
  • 1/3 cup tomato paste
  • 2 cups grated mozzarella or tasty cheese
  • 1/2 red capsicum, finely diced
  • 2 teaspoons dried oregano
  • 1 tablespoon Chooki's Original Chicken Salt
  • 1 egg, lightly beaten

Step 1: Spread

Heat the oven to 200C and line two trays with baking paper. Lay the pastry sheets flat and spread the tomato paste right to the edges in a thin even layer. Kids are good at this bit, a butter knife does the job.

Step 2: Fill

Scatter the cheese, capsicum and oregano over both sheets, then sprinkle the Chooki's Original Chicken Salt evenly across the top. The salt seasons the whole scroll from the inside, so don't be shy with it.

Step 3: Roll and Slice

Roll each sheet up tight into a log, then slice into rounds about 2cm thick. You'll get roughly eight from each sheet. Sit them cut-side up on the trays with a bit of space between them so they crisp instead of steam.

Step 4: Bake

Brush the tops with the beaten egg and bake for 18 to 20 minutes until the pastry is puffed and deep golden and the cheese is bubbling. Let them sit for 5 minutes before serving, the melted cheese is molten straight out of the oven.

Tip: Freeze the unbaked scrolls on a tray, then bag them up. You can bake them from frozen for lunchboxes, just add a few extra minutes.
