Original Salt Savoury French Toast with Melty Cheddar

  • 1/4 cup full cream milk
  • 1 tablespoon Chooki's Original Chicken Salt
  • 2 tablespoons butter
  • 1 tablespoon chives, finely snipped

French toast has been stuck on the sweet side of the menu for too long. Drop the cinnamon, whisk Chooki's Original Chicken Salt through the egg mix, stuff it with cheddar and you get something closer to a toastie that went to finishing school. Ten minutes in the pan on a cold morning and you will not go back.

  • 1/4 cup full cream milk

  • 2 tablespoons butter
  • 1 tablespoon chives, finely snipped

Step 1: Build the Sandwiches

Pile the grated cheddar onto two slices of bread, right to the edges, and press the other two slices on top. Squash each one down with your palm so the cheese packs in and the sandwich holds together in the egg.

Step 2: Whisk the Egg Mix

Crack the eggs into a wide shallow bowl, add the milk and the Chooki's Original Chicken Salt, and whisk until there are no ropey bits of white left. The salt needs to be fully dissolved through the egg or it lands in patches.

Step 3: Soak

Lay each sandwich in the egg mix for about 20 seconds a side. Any longer and day-old bread turns to sludge in the middle. You want the outside wet and the centre still dry.

Step 4: Fry

Melt the butter in a frying pan over medium heat, not high, or the egg burns before the cheese melts. Cook each sandwich 3 to 4 minutes a side until deep golden and the cheese pulls when you cut in. Scatter the chives over the top and cut on the diagonal.

Tip: Cover the pan with a lid for the last minute. The trapped steam melts the cheese right through without darkening the crust any further.
