Yep, you're putting lettuce on the barbie. A couple of minutes face down on a hot grill and baby cos goes smoky and sweet on the outside while the middle stays crunchy. Smother it in a thick avocado green goddess, throw on some toasted seeds and finish with Chooki's Zest Chicken Salt. It's a salad you eat with a knife and fork, and it disappears quicker than the snags.

  • 4 baby cos lettuces, halved lengthways with the root left on
  • 2 tablespoons olive oil
  • 2 teaspoons Chooki's Zest Chicken Salt, plus a pinch for the seeds and dressing
  • ⅓ cup mixed pepitas and sunflower seeds
  • Avocado Green Goddess:
  • 1 ripe avocado
  • 1 cup mixed soft herbs (parsley, basil and chives)
  • Juice of 1 lemon
  • 1 small garlic clove
  • 3 to 4 tablespoons cold water

Step 1: Toast the Seeds

Put a dry frying pan over medium heat and add the pepitas and sunflower seeds. Shake the pan every so often for 3 to 4 minutes, until the pepitas start to pop and puff and everything smells nutty. Tip them into a bowl straight away and toss with a pinch of Chooki's Zest Chicken Salt while they're still warm, so it sticks.

Step 2: Blitz the Dressing

Scoop the avocado into a small blender or a jug for a stick blender. Add the herbs, lemon juice, garlic, a pinch of Zest Chicken Salt and 3 tablespoons of cold water. Blitz until it's smooth and bright green. You want it like thick cream that slowly runs off a spoon, so add the last tablespoon of water if it's too stiff.

Step 3: Char the Cos

Get a chargrill pan or the barbecue hot. Brush the cut sides of the cos with olive oil and sprinkle over the Zest Chicken Salt. Lay them cut side down and leave them alone for 2 to 3 minutes, until you've got dark grill lines and the outer leaves have just started to wilt. Don't move them around or you'll lose the char.

Step 4: Dress and Serve

Flip the cos halves cut side up onto a big platter. Spoon the green goddess over the top in thick ribbons, scatter on the toasted seeds and finish with one more light shake of Zest Chicken Salt. Serve straight away while the lettuce is still warm on the outside and cold in the middle.

Tip: Keep the root on when you halve the cos. It holds the leaves together on the grill so you can flip each half in one piece with tongs.
