A proper weeknight dinner that only dirties one pan and a tray. Thick pork cutlets get a hard sear and a good shake of Chooki's Zest Chicken Salt, then sit on warm garlicky butter beans with broccolini charred until the tips go crunchy. The lemon in the Zest does half the work for you.
- 4 bone-in pork cutlets, about 2cm thick (roughly 250g each)
- 3 teaspoons Chooki's Zest Chicken Salt
- 3 tablespoons olive oil
- 2 bunches broccolini, ends trimmed
- 2 x 400g tins butter beans, drained and rinsed
- 3 garlic cloves, thinly sliced
- 1 lemon, zested and halved
- Small handful flat-leaf parsley, roughly chopped
Step 1: Season the Pork
Pull the cutlets out of the fridge 15 minutes before you cook. Pat them properly dry with paper towel, rub with 1 tablespoon of the oil and sprinkle 2 teaspoons of Chooki's Zest Chicken Salt over both sides. Dry meat browns, wet meat steams, so don't skip the paper towel.
Step 2: Char the Broccolini
Heat your grill to high. Toss the broccolini on a tray with 1 tablespoon of oil and spread it out in one layer. Grill for 5 to 6 minutes, turning once, until the florets are blackened at the edges and the stems are just tender. Put the lemon halves on the tray cut-side up for the last 3 minutes.
Step 3: Sear the Cutlets
Get a big heavy frying pan smoking hot over medium-high heat. Hold each cutlet fat-side down in the pan for a minute to render the edge, then lay them flat and cook 4 to 5 minutes a side until golden and 63°C in the thickest part. Move them to a plate and let them rest for 5 minutes.
Step 4: Warm the Beans
Drop the heat to medium and add the last tablespoon of oil and the garlic to the same pan. Fry for 1 minute until the garlic just turns golden, then tip in the butter beans, lemon zest, a squeeze of lemon and 3 tablespoons of water. Stir it through all the pork bits on the bottom of the pan for 3 minutes. Off the heat, fold in the parsley and the last teaspoon of Zest. Spoon the beans onto plates, sit a cutlet on top and pile the broccolini beside it with the charred lemon for squeezing.
Tip: Squash a few of the beans with the back of your spoon while they warm. They go creamy and soak up the pan juices without needing any butter or cream.
